- 1 pound ground chicken
- 1/4 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh mint
- 1 clove garlic, minced
- 1 large egg, lightly beaten
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil for cooking
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine ground chicken, breadcrumbs, chopped onion, parsley, mint, minced garlic, beaten egg, lemon zest, lemon juice, salt, and pepper.
- Mix the ingredients gently with your hands until just combined. Do not overmix.
- Roll the mixture into 1-inch meatballs.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the meatballs for 2-3 minutes per side until lightly browned.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the meatballs are cooked through.
- Serve hot.
Notes
- Serve with tzatziki sauce or a side salad.
- You can also bake the meatballs without searing first; bake for 15-20 minutes.
