A flavorful pork dish with ginger, lime, and coconut milk.
Ingredients

- 1 lb pork tenderloin, sliced
- 2 tbsp soy sauce
- 1 tbsp grated fresh ginger
- 2 cloves garlic, minced
- 1 lime, juiced
- 1 (13.5 oz) can full-fat coconut milk
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a bowl, combine pork, soy sauce, ginger, garlic, and lime juice. Marinate for at least 30 minutes.
- Heat olive oil in a skillet over medium-high heat.
- Add pork and cook until browned on all sides.
- Pour in coconut milk and bring to a simmer.
- Reduce heat and cook for 10-15 minutes, or until pork is cooked through and sauce has thickened slightly.
- Season with salt and pepper.

- Garnish with fresh cilantro if desired.
