Description

A flavorful pork dish with ginger, lime, and coconut milk.


Ingredients

  • 1 lb pork tenderloin, sliced
  • 2 tbsp soy sauce
  • 1 tbsp grated fresh ginger
  • 2 cloves garlic, minced
  • 1 lime, juiced
  • 1 (13.5 oz) can full-fat coconut milk
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine pork, soy sauce, ginger, garlic, and lime juice. Marinate for at least 30 minutes.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add pork and cook until browned on all sides.
  4. Pour in coconut milk and bring to a simmer.
  5. Reduce heat and cook for 10-15 minutes, or until pork is cooked through and sauce has thickened slightly.
  6. Season with salt and pepper.
