- 1.5 lbs baby potatoes, halved or quartered if large
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 cup butter
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the baby potatoes with olive oil, salt, and pepper.
- Spread the potatoes in a single layer on a baking sheet.
- Roast for 25-30 minutes, or until tender and slightly browned.
- While the potatoes are roasting, melt the butter in a small saucepan over medium heat.
- Add the minced garlic to the melted butter and cook for 1-2 minutes until fragrant, being careful not to burn it.
- Remove the potatoes from the oven.
- Pour the garlic butter mixture over the roasted potatoes and toss to coat.
- Stir in the chopped fresh parsley.
- Serve immediately.
Notes
- For extra crispy potatoes, roast them for an additional 5-10 minutes after tossing with the garlic butter.
- You can add a pinch of red pepper flakes to the garlic butter for a little heat.
