Garlic Sauce Baby Potatoes

Description

Tender baby potatoes coated in a savory garlic sauce.


Ingredients

  • 1.5 lbs baby potatoes, halved or quartered if large
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup butter
  • 1/4 cup chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the baby potatoes with olive oil, salt, and pepper.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast for 25-30 minutes, or until tender and slightly browned.
  5. While the potatoes are roasting, melt the butter in a small saucepan over medium heat.
  6. Add the minced garlic to the melted butter and cook for 1-2 minutes until fragrant, being careful not to burn it.
  7. Remove the potatoes from the oven.
  8. Pour the garlic butter mixture over the roasted potatoes and toss to coat.
  9. Stir in the chopped fresh parsley.
  10. Serve immediately.

Notes

  • For extra crispy potatoes, roast them for an additional 5-10 minutes after tossing with the garlic butter.
  • You can add a pinch of red pepper flakes to the garlic butter for a little heat.
