Description
A creamy and flavorful potato soup infused with garlic and fresh herbs.
Ingredients

- 2 tbsp olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 8 cups potatoes, peeled and cubed
- 4 cups chicken or vegetable broth
- 2 cups milk
- 1/2 cup heavy cream
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Add cubed potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
- Carefully transfer the soup to a blender or use an immersion blender to puree until smooth.
- Return the soup to the pot. Stir in milk and heavy cream. Heat gently, but do not boil.
- Stir in fresh parsley and chives. Season with salt and pepper to taste.
- Serve hot.
Notes
- For a thicker soup, use less broth.
- For a thinner soup, add more milk or broth.
- Garnish with extra herbs or a swirl of cream before serving.
