Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the sweet potato cubes with melted butter, minced garlic, salt, and pepper.
- Spread the sweet potatoes in a single layer on a baking sheet.
- Roast for 25-30 minutes, or until tender and lightly browned, flipping halfway through.
- Garnish with fresh parsley before serving.
