- 1 lb broccoli florets
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, cut into wedges
- 4 cloves garlic, minced
- 1/2 cup unsalted butter, melted
- 2 tablespoons olive oil
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: fresh parsley, chopped, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine chicken pieces, broccoli florets, bell pepper pieces, and red onion wedges.
- In a small bowl, whisk together melted butter, olive oil, minced garlic, Italian seasoning, salt, and pepper.
- Pour the butter mixture over the chicken and vegetables. Toss to coat everything evenly.
- Spread the mixture in a single layer on a large baking sheet.
- Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender-crisp.
- Garnish with fresh parsley if desired before serving.
Notes
- You can substitute chicken breasts for thighs if preferred. Adjust cooking time as needed.
- Feel free to use other vegetables like zucchini, carrots, or cherry tomatoes.
