Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 1/2 teaspoon coarse sea salt, for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the vanilla extract and salt.
  4. Gradually add the flour, mixing until just combined. Do not overmix.
  5. Shape the dough into 1-inch balls. Place them on the prepared baking sheets, about 2 inches apart.
  6. Flatten each cookie slightly with the palm of your hand or the bottom of a glass.
  7. If desired, sprinkle the tops with coarse sea salt.
  8. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  9. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
