Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (10 oz) can diced tomatoes with green chilies, undrained
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • Shredded cheese, for topping (optional)
  • Sour cream, for topping (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned. Remove chicken from skillet and set aside.
  3. Add onion and bell peppers to the skillet and cook until softened, about 5 minutes.
  4. Add garlic and cook for 1 minute more until fragrant.
  5. Stir in black beans, diced tomatoes with green chilies, cumin, chili powder, salt, and pepper.
  6. Return chicken to the skillet and stir to combine.
  7. Bring to a simmer and cook for 5-7 minutes, or until heated through.
  8. Serve hot, topped with shredded cheese and sour cream if desired.

  • For a spicier dish, add a pinch of cayenne pepper.
