Ingredients

- 1 lb chicken breast, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 (15 oz) can black beans, rinsed and drained
- 1 (10 oz) can diced tomatoes with green chilies, undrained
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper to taste
- Shredded cheese, for topping (optional)
- Sour cream, for topping (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned. Remove chicken from skillet and set aside.
- Add onion and bell peppers to the skillet and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in black beans, diced tomatoes with green chilies, cumin, chili powder, salt, and pepper.
- Return chicken to the skillet and stir to combine.
- Bring to a simmer and cook for 5-7 minutes, or until heated through.
- Serve hot, topped with shredded cheese and sour cream if desired.
Notes
- For a spicier dish, add a pinch of cayenne pepper.
- Serve with rice or tortillas.
