Ingredients

- 1 lb chicken breast, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 1 cup broccoli florets
- 1/2 cup chopped bell pepper
- 1/4 cup soy sauce
- 1 tbsp honey
- 1 tsp cornstarch
Instructions
- In a bowl, toss chicken pieces with olive oil, garlic powder, onion powder, salt, and pepper.
- Heat a skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Add broccoli florets and chopped bell pepper to the skillet. Stir-fry for 3-5 minutes until tender-crisp.
- In a small bowl, whisk together soy sauce, honey, and cornstarch.
- Return chicken to the skillet with the vegetables. Pour the sauce over the chicken and vegetables.
- Stir and cook for 1-2 minutes until the sauce thickens.
- Serve immediately or portion into containers for meal prep.
Notes
- For meal prep, allow the dish to cool completely before dividing into individual containers.
- Store in the refrigerator for up to 3 days.
- Reheat gently in the microwave or on the stovetop.
