Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp vegetable oil
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1/4 cup chicken broth
  • 1 tsp sesame oil
  • Cooked rice, for serving

Instructions

  1. In a bowl, toss chicken with soy sauce and cornstarch.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add chicken and cook until browned and cooked through. Remove chicken from skillet.
  4. Add broccoli, bell pepper, and carrot to the skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  5. Add garlic and ginger and cook for 30 seconds until fragrant.
  6. Return chicken to the skillet. Pour in chicken broth and bring to a simmer.
  7. Stir in sesame oil.
  8. Serve immediately over cooked rice.
