Ingredients

  • 1 cup cooked brown lentils
  • 1 cup mashed cooked sweet potato
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for frying

Instructions

  1. In a medium bowl, combine the cooked lentils, mashed sweet potato, breadcrumbs, chopped onion, minced garlic, parsley, cumin, salt, and pepper.
  2. Mix well until all ingredients are evenly distributed.
  3. Form the mixture into 4 equal-sized patties.
  4. Heat the olive oil in a skillet over medium heat.
  5. Carefully place the patties in the hot skillet and cook for 4-5 minutes per side, or until golden brown and crispy.
