- 1 cup cooked brown lentils
- 1 cup mashed cooked sweet potato
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1 clove garlic, minced
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil for frying
Instructions
- In a medium bowl, combine the cooked lentils, mashed sweet potato, breadcrumbs, chopped onion, minced garlic, parsley, cumin, salt, and pepper.
- Mix well until all ingredients are evenly distributed.
- Form the mixture into 4 equal-sized patties.
- Heat the olive oil in a skillet over medium heat.
- Carefully place the patties in the hot skillet and cook for 4-5 minutes per side, or until golden brown and crispy.
- Remove from skillet and drain on paper towels.
