1 large egg
2–3 tablespoons feta cheese (crumbled, ideally block feta)
1 tablespoon olive oil (or ghee for extra crisp)
Optional: black pepper, red pepper flakes, chopped parsley or dill
Optional toppings: avocado slices, Greek yogurt, olives
Heat olive oil in a nonstick or cast-iron skillet over medium heat.
Crumble the feta into a ring shape in the pan, leaving space in the center.
Crack the egg directly into the middle of the ring.
Cook uncovered for 3–5 minutes until the egg whites are set and feta edges are golden.
Cover for 1–2 minutes if you prefer a less runny yolk.
