Description

A lighter version of classic turkey stroganoff, this recipe offers a creamy and satisfying meal without the heavy calories.


Ingredients

  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups low-sodium chicken broth
  • 1/2 cup plain nonfat Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • Salt and black pepper to taste
  • 8 ounces egg noodles, cooked
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  2. Add chopped onion and sliced mushrooms to the skillet. Cook until softened, about 5-7 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
  3. Sprinkle flour over the turkey and vegetable mixture. Stir well and cook for 1 minute.
  4. Gradually whisk in chicken broth until smooth. Bring to a simmer, then reduce heat and cook for 5 minutes, stirring occasionally, until the sauce thickens.
  5. In a small bowl, whisk together Greek yogurt, Dijon mustard, and Worcestershire sauce.
  6. Remove the skillet from heat. Stir the yogurt mixture into the sauce until well combined and creamy.
  7. Season with salt and black pepper to taste.
  8. Serve the stroganoff over cooked egg noodles. Garnish with fresh parsley.
