- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 medium onion, chopped
- 8 ounces mushrooms, sliced
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups low-sodium chicken broth
- 1/2 cup plain nonfat Greek yogurt
- 1 tablespoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- Salt and black pepper to taste
- 8 ounces egg noodles, cooked
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add chopped onion and sliced mushrooms to the skillet. Cook until softened, about 5-7 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
- Sprinkle flour over the turkey and vegetable mixture. Stir well and cook for 1 minute.
- Gradually whisk in chicken broth until smooth. Bring to a simmer, then reduce heat and cook for 5 minutes, stirring occasionally, until the sauce thickens.
- In a small bowl, whisk together Greek yogurt, Dijon mustard, and Worcestershire sauce.
- Remove the skillet from heat. Stir the yogurt mixture into the sauce until well combined and creamy.
- Season with salt and black pepper to taste.
- Serve the stroganoff over cooked egg noodles. Garnish with fresh parsley.

- For a gluten-free option, use gluten-free egg noodles and gluten-free flour or cornstarch.
- Adjust the amount of Dijon mustard to your preference.
