A quick and easy recipe for creamy gnocchi with spinach and feta cheese.
Ingredients

- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 (16 ounce) package potato gnocchi
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 5 ounces fresh spinach
- 1/2 cup crumbled feta cheese
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
- Add gnocchi to the skillet and cook according to package directions, or until lightly browned.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and the sauce thickens slightly.
- Add spinach to the skillet and cook until wilted, about 2-3 minutes.
- Stir in feta cheese and season with salt and pepper.
- Serve immediately.
Notes
- For a richer sauce, use half-and-half instead of heavy cream.
- Add cooked chicken or shrimp for a heartier meal.
- Garnish with fresh basil or parsley if desired.
