Description
A quick and easy recipe for tender shrimp in a rich garlic cream sauce served over fluffy mashed potatoes.

- 1.5 lbs large shrimp, peeled and deveined
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley
- Salt and black pepper to taste
- 4 cups prepared mashed potatoes
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
- Stir in heavy cream and bring to a simmer. Cook for 3-5 minutes, stirring occasionally, until the sauce has thickened slightly.
- Reduce heat to low and stir in Parmesan cheese until melted and smooth.
- Return the shrimp to the skillet and toss to coat in the sauce. Stir in parsley.
- Season with salt and pepper to taste.
- Serve the creamy garlic shrimp immediately over prepared mashed potatoes.
Notes
- For extra flavor, you can add a pinch of red pepper flakes to the sauce.
- If you don’t have chicken broth, you can use vegetable broth or even water.
- Ensure your mashed potatoes are warm before serving.
