A rich and comforting soup with chicken, Parmesan cheese, and vegetables.
Ingredients

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 medium onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add chicken pieces and cook until browned on all sides. Remove chicken from the pot and set aside.
- Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and bring to a boil.
- Return chicken to the pot. Reduce heat and simmer for 15-20 minutes, or until chicken is cooked through.
- Stir in heavy cream and Parmesan cheese. Heat gently until warmed through, do not boil.
- Season with salt and pepper to taste.
- Stir in fresh parsley before serving.
Notes
- For a thicker soup, you can add a slurry of 2 tablespoons cornstarch mixed with 2 tablespoons cold water in step 7.
- You can substitute rotisserie chicken for cooked chicken breasts.
- Add cooked pasta or rice for a heartier meal.
