Description

A simple recipe for tender chicken with a bright coconut lime flavor.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/4 cup lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Cut chicken breasts into bite-sized pieces.
  2. In a bowl, whisk together coconut milk, lime juice, minced garlic, grated ginger, salt, and pepper.
  3. Add the chicken pieces to the marinade and toss to coat. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Remove chicken from marinade, reserving the marinade.
  6. Add chicken to the hot skillet and cook until browned on all sides.
  7. Pour the reserved marinade into the skillet with the chicken.
  8. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-15 minutes, or until chicken is cooked through and the sauce has thickened slightly.
  9. Serve hot, garnished with fresh cilantro.

Notes

  • For a spicier dish, add a pinch of red pepper flakes to the marinade.
  • Serve over rice or with your favorite side dishes.
