Description
A refreshing salad with chickpeas, peaches, and a light vinaigrette.
Ingredients

- 1 (15 ounce) can chickpeas, rinsed and drained
- 2 ripe peaches, pitted and diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a medium bowl, combine the chickpeas, diced peaches, red onion, and cilantro.
- In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
- Pour the dressing over the chickpea and peach mixture.
- Toss gently to combine.
- Serve immediately or chill for later.
Notes
- For a creamier texture, you can add 1/4 cup of crumbled feta cheese.
- If fresh peaches are not available, you can use canned peaches, drained well.
