Description

A refreshing salad with chickpeas, peaches, and a light vinaigrette.


Ingredients

  • 2 ripe peaches, pitted and diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a medium bowl, combine the chickpeas, diced peaches, red onion, and cilantro.
  2. In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
  3. Pour the dressing over the chickpea and peach mixture.
  4. Toss gently to combine.
  5. Serve immediately or chill for later.

Notes

  • For a creamier texture, you can add 1/4 cup of crumbled feta cheese.
