Ingredients

- 1 (15 ounce) can chickpeas, rinsed and drained
- 1 ripe avocado, diced
- 4 ounces feta cheese, crumbled
- 1/2 red onion, thinly sliced
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chickpeas, diced avocado, crumbled feta cheese, and sliced red onion.
- In a small bowl, whisk together the olive oil and lemon juice. Season with salt and pepper.
- Pour the dressing over the salad.
- Add the chopped parsley and toss gently to combine.
- Serve immediately.
Notes
- For a spicier kick, add a pinch of red pepper flakes.
- You can add other vegetables like cucumber or bell peppers.
