Ingredients

- 1 (15 ounce) can chickpeas, rinsed and drained
- 2 cups cooked beets, diced
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine chickpeas, diced beets, crumbled feta, chopped red onion, and chopped parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or chill for later.
Notes
- For best results, use pre-cooked beets.
- You can substitute goat cheese for feta if desired.
- Add a pinch of red pepper flakes for a little heat.
