A creamy and hearty casserole featuring chicken and wild rice.

- 1 cup wild rice blend
- 4 cups chicken broth
- 2 tablespoons butter
- 1 cup chopped onion
- 1 cup chopped celery
- 1 cup chopped mushrooms
- 2 cups cooked chicken, shredded
- 1 can (10.5 oz) condensed cream of chicken soup
- 1/2 cup sour cream
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese
Instructions
- Cook wild rice blend according to package directions using chicken broth. Drain any excess liquid.
- Preheat oven to 375°F (190°C).
- Melt butter in a large skillet over medium heat. Add onion, celery, and mushrooms. Cook until softened, about 5-7 minutes.
- Stir in cooked chicken, cream of chicken soup, and sour cream.
- Add the cooked wild rice and parsley. Season with salt and pepper.
- Pour the mixture into a 9×13 inch baking dish.
- Top with shredded cheddar cheese.
- Bake for 20-25 minutes, or until heated through and cheese is melted and bubbly.
Notes
- You can substitute brown rice or white rice for wild rice if needed.
- For a richer flavor, use heavy cream instead of sour cream.
- Add other vegetables like peas or carrots for extra nutrition.
