  • 4 cups chicken broth
  • 2 tablespoons butter
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped mushrooms
  • 2 cups cooked chicken, shredded
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Cook wild rice blend according to package directions using chicken broth. Drain any excess liquid.
  2. Preheat oven to 375°F (190°C).
  3. Melt butter in a large skillet over medium heat. Add onion, celery, and mushrooms. Cook until softened, about 5-7 minutes.
  4. Stir in cooked chicken, cream of chicken soup, and sour cream.
  5. Add the cooked wild rice and parsley. Season with salt and pepper.
  6. Pour the mixture into a 9×13 inch baking dish.
  7. Top with shredded cheddar cheese.
  8. Bake for 20-25 minutes, or until heated through and cheese is melted and bubbly.
