- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 medium sweet potato, peeled and diced
- 1 cup uncooked white rice
- 2 cups chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add chicken pieces and cook until browned on all sides.
- Stir in diced sweet potato, uncooked rice, chicken broth, salt, and pepper.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork before serving.
Notes
- You can substitute chicken breast for chicken thighs if preferred.
- Add other vegetables like peas or corn for extra flavor and nutrients.
