Description

A simple and flavorful one-pot meal featuring chicken and sweet potatoes.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 medium sweet potato, peeled and diced
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add chicken pieces and cook until browned on all sides.
  3. Stir in diced sweet potato, uncooked rice, chicken broth, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  5. Fluff the rice with a fork before serving.
