Chicken Parm Cottage Bowl

Description

A comforting bowl featuring chicken parmesan flavors with a mashed potato base.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 lbs potatoes, peeled and quartered
  • 1/4 cup milk
  • 2 tbsp butter
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Boil potatoes until tender, about 15-20 minutes. Drain.
  2. Mash potatoes with milk, butter, salt, and pepper until smooth. Set aside.
  3. Cut chicken breasts into bite-sized pieces.
  4. Heat olive oil in a skillet over medium-high heat. Add chicken and cook until browned and cooked through.
  5. Stir in marinara sauce and simmer for 5 minutes.
  6. Spoon mashed potatoes into bowls.
  7. Top with chicken and marinara mixture.
  8. Sprinkle with mozzarella and Parmesan cheeses.
  9. Broil for 2-3 minutes until cheese is melted and bubbly.

Notes

  • For a crispier topping, broil for an additional minute.
  • You can add a pinch of red pepper flakes to the marinara for a little heat.
