A comforting bowl featuring chicken parmesan flavors with a mashed potato base.
Ingredients

- 1 lb boneless, skinless chicken breasts
- 1 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 lbs potatoes, peeled and quartered
- 1/4 cup milk
- 2 tbsp butter
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Boil potatoes until tender, about 15-20 minutes. Drain.
- Mash potatoes with milk, butter, salt, and pepper until smooth. Set aside.
- Cut chicken breasts into bite-sized pieces.
- Heat olive oil in a skillet over medium-high heat. Add chicken and cook until browned and cooked through.
- Stir in marinara sauce and simmer for 5 minutes.
- Spoon mashed potatoes into bowls.
- Top with chicken and marinara mixture.
- Sprinkle with mozzarella and Parmesan cheeses.
- Broil for 2-3 minutes until cheese is melted and bubbly.
Notes
- For a crispier topping, broil for an additional minute.
- You can add a pinch of red pepper flakes to the marinara for a little heat.
