A simple and quick one-pan meal featuring chicken and broccoli.
Ingredients

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups broccoli florets
- 1/4 cup chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces, garlic powder, onion powder, salt, and pepper. Cook until chicken is browned on all sides.
- Add broccoli florets to the skillet.
- In a small bowl, whisk together chicken broth and cornstarch until smooth. Pour over the chicken and broccoli.
- Stir in soy sauce.
- Bring to a simmer and cook, stirring occasionally, until broccoli is tender-crisp and sauce has thickened, about 5-7 minutes.
- Serve immediately.
Notes
- For a creamier sauce, stir in 2 tablespoons of heavy cream at the end of cooking.
- You can add other vegetables like bell peppers or carrots.
