A hearty and creamy chowder packed with vegetables and cheese.
Ingredients

- 1 tablespoon olive oil
- 1 cup chopped onion
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups mixed vegetables (carrots, peas, corn, potatoes), chopped
- 1 cup milk
- 1/2 cup shredded cheddar cheese
- 1/4 cup shredded Monterey Jack cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in vegetable broth and add mixed vegetables.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until vegetables are tender.
- Stir in milk and cheeses until melted and smooth.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- For a thicker chowder, you can mash some of the cooked potatoes against the side of the pot.
- Add cooked chicken or bacon for extra protein.
