A simple recipe for homemade graham crackers with a peanut butter buckeye filling.

- 2 cups all-purpose flour
- 1 cup graham cracker crumbs
- 1/2 cup granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1 cup creamy peanut butter
- 1/4 cup powdered sugar
- 2 tablespoons milk
- 1/2 cup semi-sweet chocolate chips
- 1 teaspoon vegetable shortening
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, whisk together flour, graham cracker crumbs, sugar, baking soda, and salt.
- Add softened butter, honey, and vanilla extract. Mix until a dough forms.
- Divide the dough in half. Roll out each half between two sheets of parchment paper to about 1/4-inch thickness.
- Cut the dough into desired shapes (squares or rectangles). Place on prepared baking sheets.
- Bake for 10-12 minutes, or until lightly golden brown. Let cool completely on the baking sheets.
- While the crackers cool, prepare the buckeye filling. In a medium bowl, combine peanut butter and powdered sugar. Mix until smooth. Add milk, one tablespoon at a time, until the mixture is a thick but spreadable consistency.
- Spread a layer of the peanut butter mixture onto half of the cooled graham crackers. Top with the remaining crackers to form sandwiches.
- Melt chocolate chips and shortening in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
- Dip the edges of the graham cracker sandwiches into the melted chocolate. Place on parchment paper to set.
Notes
- For a stronger graham cracker flavor, increase the graham cracker crumbs to 1 1/2 cups and decrease the flour to 1 1/2 cups.
- You can adjust the amount of milk in the peanut butter filling to reach your desired consistency.
- Store buckeye graham crackers in an airtight container at room temperature for up to 3 days.
