Description

A simple recipe for homemade graham crackers with a peanut butter buckeye filling.

  • 1 cup graham cracker crumbs
  • 1/2 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter
  • 1/4 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 cup semi-sweet chocolate chips
  • 1 teaspoon vegetable shortening

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, graham cracker crumbs, sugar, baking soda, and salt.
  3. Add softened butter, honey, and vanilla extract. Mix until a dough forms.
  4. Divide the dough in half. Roll out each half between two sheets of parchment paper to about 1/4-inch thickness.
  5. Cut the dough into desired shapes (squares or rectangles). Place on prepared baking sheets.
  6. Bake for 10-12 minutes, or until lightly golden brown. Let cool completely on the baking sheets.
  7. While the crackers cool, prepare the buckeye filling. In a medium bowl, combine peanut butter and powdered sugar. Mix until smooth. Add milk, one tablespoon at a time, until the mixture is a thick but spreadable consistency.
  8. Spread a layer of the peanut butter mixture onto half of the cooled graham crackers. Top with the remaining crackers to form sandwiches.
  9. Melt chocolate chips and shortening in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
  10. Dip the edges of the graham cracker sandwiches into the melted chocolate. Place on parchment paper to set.

Notes

  • For a stronger graham cracker flavor, increase the graham cracker crumbs to 1 1/2 cups and decrease the flour to 1 1/2 cups.
  • You can adjust the amount of milk in the peanut butter filling to reach your desired consistency.
  • Store buckeye graham crackers in an airtight container at room temperature for up to 3 days.
