Easy and healthy zucchini boats filled with BBQ chicken.


Ingredients

  • 2 medium zucchinis
  • 1 cup cooked shredded chicken
  • 1/2 cup BBQ sauce
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons chopped green onions

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut zucchinis in half lengthwise. Scoop out the seeds to create a boat shape.
  3. In a bowl, mix shredded chicken and BBQ sauce.
  4. Fill the zucchini boats with the BBQ chicken mixture.
  5. Top with shredded cheddar cheese.
  6. Place zucchini boats on a baking sheet.
  7. Bake for 20-25 minutes, or until zucchini is tender and cheese is melted.
  8. Garnish with chopped green onions before serving.

Notes

  • You can use leftover rotisserie chicken for convenience.
