Description

A simple and flavorful dish featuring tender chicken and sweet potatoes coated in barbecue sauce.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 medium sweet potatoes, peeled and cubed
  • 1/2 cup barbecue sauce
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken pieces and sweet potato cubes with olive oil, salt, and pepper.
  3. Spread the chicken and sweet potatoes in a single layer on a baking sheet.
  4. Bake for 20 minutes.
  5. Remove the baking sheet from the oven and drizzle the barbecue sauce over the chicken and sweet potatoes. Toss to coat evenly.
  6. Return to the oven and bake for another 10-15 minutes, or until the chicken is cooked through and the sweet potatoes are tender.

  • For extra flavor, add a sprinkle of paprika or garlic powder to the chicken and sweet potatoes before baking.
