  • 1 1/2 cups rolled oats

  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1/4 cup milk (dairy or non-dairy)
  • 1 large egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
  2. In a large bowl, combine the mashed bananas, honey or maple syrup, applesauce, milk, and egg. Mix well.
  3. In a separate bowl, whisk together the rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, and salt.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
