Baked Stuffed Salmon with Spinach and Feta

Description

A simple recipe for salmon stuffed with spinach and feta cheese, baked until flaky.


Ingredients

  • 1 pound salmon fillet
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine chopped spinach, feta cheese, breadcrumbs, minced garlic, olive oil, salt, and pepper. Mix well.
  3. Place the salmon fillet on a baking sheet.
  4. Create a pocket in the salmon fillet by slicing horizontally, but not all the way through.
  5. Stuff the spinach and feta mixture into the pocket of the salmon.
  6. Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Notes

  • You can add a squeeze of lemon juice over the salmon before baking for extra flavor.
