- 1 lb cod fillets
- 1/2 cup coconut milk
- 2 tbsp lemon juice
- 1 clove garlic, minced
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 tbsp chopped fresh parsley
Instructions
- Preheat your oven to 400°F (200°C).
- Place the cod fillets in a baking dish.
- In a small bowl, whisk together the coconut milk, lemon juice, minced garlic, salt, and pepper.
- Pour the coconut milk mixture over the cod fillets.
- Bake for 12-15 minutes, or until the cod is opaque and flakes easily with a fork.
- Garnish with fresh parsley before serving.
Notes
- You can add other vegetables like broccoli or asparagus to the baking dish.
