Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup shredded sweetened coconut
  • 1/2 cup panko breadcrumbs
  • 1/4 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray

Instructions

  1. In a shallow dish, combine shredded coconut and panko breadcrumbs.
  2. In another shallow dish, place the flour.
  3. In a third shallow dish, place the beaten eggs.
  4. Season the flour with salt and pepper.
  5. Dredge each shrimp in the seasoned flour, then dip in the beaten eggs, and finally coat with the coconut-panko mixture.
  6. Preheat your air fryer to 400°F (200°C).
  7. Lightly spray the air fryer basket with cooking spray.
  8. Arrange the coated shrimp in a single layer in the air fryer basket.
  9. Cook for 8-10 minutes, flipping halfway through, until golden brown and cooked through.
